Here is a fantastic recipe for something delicious to do with those greens you have. This is a great way to show off your culinary skills.

Ingredients

  • 1 Cup of Black or Brown Rice
  • 1 Tbsp. of your favorite cooking oil
  • 1 diced Onion
  • 2 Cloves of minced Garlic
  • 6 cups of your favorite chopped Greens
  • 1 Cup of sliced Mushrooms
  • ¼ Cup of Slivered Toasted Almonds
  • Salt & Pepper to taste
  • ⅓ of a Lemon
  • 2-4 Slices of Bacon - Optional

Directions

  1. Cook rice according to package instructions. (For brown rice, this means 2 parts water, 1 part rice. Place in a pan, cover, and bring to a boil. Then simmer for 45 minutes, or until rice is tender.)
  2. If using optional bacon - Chop and fry bacon in a large skillet until not completely cooked, and drain off most grease. Then, remove partially cooked bacon and set it aside.
  3. If not using bacon - In a large skillet, heat olive oil over medium-high heat.
  4. To a warmed oiled large skillet, add onion and garlic, and sauté until onions are nearly translucent. Stir in mushrooms, and cook another 3-5 minutes, until mushrooms get a nice sear.
  5. Stir in greens (and bacon if using) and season with salt and pepper. Continue to cook, stirring regularly, until greens are tender, 3-4 minutes. Squeeze lemon on top, and adjust salt and pepper, if needed.
  6. Divide rice between bowls, and top with greens. Scatter almonds across each bowl. Serve.
